Star Anise is an under used and less explored spice in the Western culinary kitchen. Its distinctive flavours will change ever so slightly and enhance your final dish. It’s widely used in Middle Eastern dishes and the Far East.

I started my career at a young age, back in 1989 in a cool function centre in a small coastal town in Israel; one of the building blocks of my love affair with the Hospitality Industry. From there to culinary school for 4 years and an apprenticeship in one of the top hotels in Tel Aviv. After my military service I worked in hotels in Eilat, Israel (Israel’s version of the Gold Coast) and the Haytt Dead Sea.

In 1998 I arrived in Australia and diversified my knowledge in cafés and restaurants. The biggest and by far the most significant was La Camera Southgate. Where I was Head Chef for 7 years before I headed to Bali Mandira hotel as Executive Chef.

 
 

On my return to Australia in in 2009 I worked with both The Degani group Head Office and Docklands Catering group . 2011 saw me back at La Camera Southgate as Executive Chef. Leading a strong team, we achieved a great reputation and a high profile position in Southbank.

 
 
 

What I have learnt in the past three decades both here and overseas is that there is always another way to do things to achieve your target. Hospitality is ever changing, and we must adapt to today’s reality. You may have a great product, but your cash flow in poor, your Chef is a great cook, but when it comes to procurement, there are problems closing the best deal with the supplier.
